Honey Almond Salmon and Sweet Potato Recipe
Ingredients for Salmon:
- 8 – 16 oz Salmon Fillet
- Slivered Almonds
Ingredients for Sweet Potatoes:
- 2-4 Sweet Potatoes
Preheat oven to 425 degrees. Place sweet potatoes in oven on foil or a baking pan to prevent drips. Cook for approximately an hour.
Spray a baking dish with olive oil and place salmon in the baking dish. Foil can be used on the bottom for easy clean up. Sprinkle pepper over salmon. Next, lightly drizzle honey over the salmon to add a light sweet flavor. Use a spoon or spatula to evenly coat the salmon with honey. Lastly, sprinkle almonds on top of salmon to add a little crunch.
When sweet potatoes have about 30 minutes left, turn heat down to 350 degrees and place salmon in oven and cook 20-30 minutes until fish flakes easily with a fork.
When the sweet potatoes are done, take them out of the oven and scoop them into a bowl. Sprinkle cinnamon and walnuts on the top and mix around. I like too cook extra sweet potatoes to warm up later in the week.
