Easy Egg Sandwich Recipe

This is one of my all time favorite recipes because it's super easy and fast to make (less than 10 minutes!) So if you are on the go this is a great way to get a healthy, balance breakfast that's much better for you than a McDonald's McMuffin! Ingredients:

  • Olive Oil Spray
  • 2-4 Eggs
  • Diced Green or Colored Peppers and Onions
  • Toasted Whole Grain English Muffin or Bread
  • Lowfat Cheese
  • Salt & Pepper

Recipe:

  1. Lightly spray the inside of a small bowl with olive oil spray to keep the egg from sticking.
  2. Break two eggs into the bowl. You can keep the egg yolks in or scoop them out for a higher protein, lower fat breakfast.
  3. Sprinkle in onions, green or colored peppers, salt, and pepper.
  4. Mix the eggs and other ingredients together with a fork.
  5. Cook the egg in microwave for approximately 1:15 or until thoroughly cooked.
  6. Lightly spray your toasted English Muffin or bread with olive oil spray.
  7. Add the cooked egg to the muffin.
  8. For an extra protein punch you can also mix up and cook another egg patty to add to the sandwich! Just repeat steps 1-5 above.
  9. Add sliced cheese to the sandwich and voila! Enjoy!

Hey Becky …tried the egg recipe . I am not a big fan of the texture of microwave eggs so i just used a skillet and sprayed it with olive oil spray and did it really quick also . By the time i cracked my eggs and put in peppers and onions..my pan was hot and ready to go . So i think the timing was about equal and really was very delicious so thanks for sharing !! I will be looking forward to more ideas . Thanks Deb

Hey Deb! Well that works too! It’s all about finding what you like and what is easy for YOU so thanks so much for the suggestion! I’ll have to give that at try too.
