Healthy Chia Pudding Recipe
Remember the days of chia pets? You’d put some seeds on a little pet and let those seeds grow to make some awesomely green fur on your pet. I never actually had a chia pet, but I always thought it was sooo fascinating when I was little and I never thought they’d make a comeback in the food aisle!
Well, they’re back and those chia seeds are actually a really great source of omega 3’s and make a super tasty pudding.

- 3 medium brown bananas, mashed
- 1 can coconut milk
- 1 cup of boxed coconut milk, unsweeteened
- 1 tsp vanilla extract
- 2 tbsp of pure maple syrup
- 4 tbsp chia seeds
Blend all ingredients, except the chia seeds, together in a blender. Add chia seeds and gently stir.
Chill. If the pudding is not thick enough after chilling overnight, add more chia seeds.
